1/2 cup diced tomato
1/4 cup diced yellow pepper
2 tablespoons diced kalamatas
1 clove garlic, minced
1 teaspoon balsamic vinegar
Salt, to taste
Pepper, to taste
7-ounce mini French loaf, cut into 20 slices
2 tablespoons olive oil
8 ounces Dragone® Fresh Mozzarella Cheese, sliced into 10 rounds and halved
Preheat the broiler.
In a small bowl, combine the tomato, yellow pepper, kalamatas, garlic and balsamic. Season with salt and pepper and set aside.
Line a baking sheet with nonstick foil. Then, place the bread in a single layer, brush the tops with olive oil and broil 6-8 inches from the heating element until golden, 2–3 minutes. Turn and broil the other side, 1–2 minutes, until it begins to toast. Then, remove it from the oven.
Turn the oiled side up and top with a Dragoneo® Fresh Mozzarella Cheese slice and bruschetta mix. Serve immediately.
