Mozzarella, Orzo & Snap Pea Salad

Ingredients

  • 1 cup dried orzo
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons grated lemon zest
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced or finely chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 pint each red and yellow cherry tomatoes, halved
  • 1 cup halved snap peas with strings removed
  • 8 ounces Dragone® Fresh Mozzarella Cheese, cut into chunks
  • 1/4 cup freshly chopped dill
  • 1/4 cup freshly chopped chives
  • 1/4 cup freshly chopped tarragon

Directions

Cook the orzo according to the package directions. Drain and let cool.

Whisk together the oil, lemon zest, lemon juice, garlic and 1/2 teaspoon each salt and pepper in a medium bowl. Add the cherry tomatoes, snap peas, Dragone® Fresh Mozzarella Cheese, herbs, and orzo and toss to combine.
