Ingredients
- 1 cup dried orzo
- 3 tablespoons extra virgin olive oil
- 2 teaspoons grated lemon zest
- 2 tablespoons lemon juice
- 2 cloves garlic, minced or finely chopped
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 pint each red and yellow cherry tomatoes, halved
- 1 cup halved snap peas with strings removed
- 8 ounces Dragone® Fresh Mozzarella Cheese, cut into chunks
- 1/4 cup freshly chopped dill
- 1/4 cup freshly chopped chives
- 1/4 cup freshly chopped tarragon
Directions
Cook the orzo according to the package directions. Drain and let cool.
Whisk together the oil, lemon zest, lemon juice, garlic and 1/2 teaspoon each salt and pepper in a medium bowl. Add the cherry tomatoes, snap peas, Dragone® Fresh Mozzarella Cheese, herbs, and orzo and toss to combine.
