Fritters:
- 2 cups fresh or frozen corn kernels
- 1 cup matchstick carrots, roughly chopped
- ½ cup scallions, thinly sliced
- ½ cup red pepper, diced small
- ¾ cup plus more for garnish Crumbled Feta Cheese
- 1 cup Dragone® Fresh Mozzarella Cheese, shredded
- 6 large eggs, whisked
- 1 ½ cups all-purpose flour
- ½ cup cornmeal
- 1 teaspoon Chinese five-spice
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- ¼ teaspoon black pepper
- Vegetable oil
Ricotta Dill Dipping Sauce:
- 1 cup Dragone® Whole Milk Ricotta Cheese
- ½ cup crumbled Feta Cheese
- ½ cup fresh dill, chopped, or substitute 3 tablespoons dry dill
- 2 tablespoons mayonnaise
- 2 limes, juiced
- Sea salt, to taste
- Black pepper, to taste
Directions
In a large bowl, stir together the corn kernels, carrots, scallions, red peppers, ¾ cup of crumbled Feta Cheese and shredded Dragone® Fresh Mozzarella Cheese.
In a separate bowl, whisk together the eggs. Then, slowly whisk in the all-purpose flour, cornmeal and spices until everything is thoroughly combined.
Finally, stir the egg mixture into the corn mixture.
Heat a large cast-iron pan with ½ inch of oil and scoop the batter into the hot oil with a ¼-cup ice cream scoop.
Working in batches, fry the fritters until they’re cooked through and golden brown on both sides, about 3 minutes per side, turning once. Remove them and place them on a paper towel-lined plate.
Then, make the Ricotta Dill Dipping Sauce by mixing all the ingredients in a food processor or blender and blending until everything is smooth. Taste and adjust the salt and pepper to your liking.
Serve the fritters garnished with crumbled Feta Cheese and with the Ricotta Dill Dipping Sauce on the side.

Tip: If you have leftover fritters, serve them as a delicious recipe-remixed breakfast! Rewarm the fritters and serve them with an over-easy egg. For an extra twist, serve them with sweet Thai chili sauce and sliced scallions.
